Besides coconut oil, olive oil is one of the best cooking oil. Using olive oil for dressing and cooking reduces the risk of developing heart diseases by approximately 41 percent. The arteries clog as a result of oxidized cholesterol sticking to the arterial walls. Olive oil contains important fatty acid, oleic acid, and other monounsaturated fats that mix with the cholesterol thus preventing oxidization and clogging.
According to a 2011 study on the use of olive oil for both dressing and cooking, 41 for every 100 people above 65 years of age using olive oil were less likely to develop stroke.
