Borscht
Borscht is a soup common throughout Russia and Eastern Europe; this soup is made with beets. It is most often eaten at dinner on Christmas eve. Borscht is often quite a simple meal; and is eaten without any noodles or vegetables in the soup. Sometimes; people add sour cream to change the color of the soup from dark red to light pink. This also helps to mild out the taste.
